Roasted Potato Bacon Bites

I don’t know about you, but I kind of think you can’t go wrong with an appetizer that calls for potatoes, bacon and cheese {a perfect combination if you ask me}. So if you’re planning a super bowl party, or just having friends over, these roasted potato bacon bites are awesome.

Ingredients:

3 or 4 large potatoes {I used red potatoes}
6 strips of  bacon, cooked until crisp and then chopped
1/2 cup shredded cheese {I like to use cheddar and mozzarella}
1/4 cup chives, chopped
Salt & pepper to taste

Roasted Potato Bacon Bites

Directions

While the oven preheats to 375 degrees, wash and cut the potatoes about 1/4 inch thick {I used a mandolin slicer}. Cover potatoes with water in a large pot and cook over high heat, until water boils, continue cooking  for an extra 4-5 minutes. You want them a bit under cooked and still firm.

After draining potatoes arrange on a lined baking sheet {my favorite to use is a Silpat}. Brush the potatoes lightly with olive oil and then sprinkle with the bacon and cheese. Add salt and pepper to taste. Pop in the oven for 15 minutes or until cheese is golden brown and bubbly. Make sure the potatoes are cooked through. Remove and sprinkle with chives.

    Yummy and frugal to boot. I was thinking it might be easier to brush the potatoes with oil and roast them then add the toppings and bake until the cheese melts and then sprinkle with the chives. That would eliminate the boiling step and also skip a pot to wash.
    I’m new to your site. It’s becoming a favorite. Thanks.
