Roasted Corn with Bacon and Onions

August + Corn = LOVE.

Every year my husband comes home with a couple of boxes of corn from a local farmer and it is the freshest and tastiest corn on the planet. This recipe for roasted corn with bacon and onions is one of our favorites and a crowd-pleaser when I bring it to potlucks.

Ingredients

8 slices bacon, chopped {Reserve bacon drippings}
6 cups corn kernels {I used frozen}
1 cup onion, diced
1 tablespoon unsalted butter
3 cloves garlic, minced
1/2 teaspoon black pepper
1/2 teaspoon salt

Directions

Fry bacon and onions until the lightly browned, add corn kernels, butter, salt and pepper. Cook until the corn mixture is golden, stirring occasionally {about 5 minutes}. Add garlic, salt and pepper when there is about 1 minute of cooking time left. Serve warm.
