Hubbard squash. We have 5 growing of them growing in the backyard right now. Butternuts are usually my winter squash of choice {we’ve already harvested 2 this year} but this year the hubbards are taking over and that’s fine by me. I hope we get a 20 pounder! ๐
There were several times this past summer when I nearly pulled up this plant. I could see a ton of flowers, but never any fruit…I assumed it was a zucchini plant that for some reason wasn’t getting pollinated. And then finally, I noticed something growing. As it turns out, I have a Gold Nugget Winter Squash growing in the side garden. And I’m excited!
Buttercup squash. They are perfect for making pumpkin pies. I noticed 4 growing {there could be more, but I didn’t want to chance stepping on the vines behind the garden boxes to find out}.
And last but not least… my late blooming butternut squash. They won’t make it into winter storage {too small} but that doesn’t mean I can’t chop them up and toss them into a stir fry.

Squash are tied with tomatoes as my favorites. 1/3 of my tiny garden is winter squash. I have one blue Hubbard and it’s my prized squash! So excited to weigh it and taste it. How do you prepare yours? This is my first one. I’ve got tons of amazing Zucchino Rampicantes too. They are hilarious. A first for me on those too. I’m excited to have such a yummy stash of squash going into this winter!

I’m also interested in the uses for unripe squash. All of our ripe pumpkins are curing, but I’m trying to decide what to do with 2 unripe Seminole pumpkins on the vine that likely won’t ripen by frost. Mavis, did you like your green pumpkin “apple” pie from a while back? If so, I may try that.

I have a Hubbard squash growing across my front yard. It is planted in my porch flowerbed, but now trails across my front yard. It has given two large squash. I’ve never seen these before, but we had vegetable for a week with one. The neighbors come to check on it and I am now on the walkers’ path, so they can see how it is progressing.

This year I planted Boston Marrow an endangered pumpkin-like winter squash. In a 100 square foot, garden bed, planted 12 seedlings, and harvested 548 pounds of dark red-orange squash! Planted May 10th, harvested the first part of Sept. An absolutely amazing squash! Tastes like butternut, very creamy and smooth, and a good keeper too.
