Are those sweet potato slips? We had mixed results with them last year, but we’re trying again because the few sweet potatoes we got were better than any we’d ever eaten. We just planted Vardaman, Georgia Jet, and Diane sweet potatoes and are hoping having 3 varieties will hedge our bets. The leaves are also edible, and they are now some of our favorite greens.

A friend of mine have me some purple sweet potatoes last fall, so I sprouted most of them and have been planting the slips in my garden this year. Funny thing, even after taking the slips off the potatoes, they’re still in water growing more! I have found with mine, the vine has been dying after I plant it, but then it starts sprouting again. I also enjoyed the leaves this winter. Quite tasty.
