1 1/2 cups sugar
1/2 cup vegetable oil {you could sub applesauce or melted butter}
2 eggs
1 3/4 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/3 cup water
1 cup sweet potatoes, cooked and mashed
Preheat oven to 350F.
Grease a 9×5 loaf pan and set aside.
In a large mixing bowl or stand mixer, combine sugar and oil and beat well.
Mix in eggs and beat well.
In a separate bowl, mix flour, baking soda, salt, cinnamon and nutmeg until well combined.
Add a little of the flour mixture to the sugar mixture, then pour in about half of the water; add more flour mixture and the remaining water and mix until well combined.
Stir in sweet potatoes.
Spread batter evenly in pan and bake for 1 hour.
Serve with coffee or tea. Enjoy!
